Texas Caviar Recipe

Caution: The final product does not look too great. Trust me, it tastes good!

Texas Caviar
3-4 small cans of Rotel (I used 1 large and one small Original Rotel)
1 can black beans
1 can black eyed peas
1 can whole kernel corn
1 can of hominy
1 large can of diced tomatoes (I used the petite diced)

Drain all of the canned goods.

2-3 diced bell peppers any or all colors (I used green and red)
1-2 sweet onions diced (I chopped mine very fine)

parsley flakes (just shake a little in)

1 bottle of Italian dressing

There are several variations to this recipe. If you search it on the internet you will find them! Some add cilantro, jalapeno peppers and chopped green onions. You will need a very large bowl to mix all of this in. It makes a BIG BATCH! It gets better flavor the longer it sits. I made mine for Abe's party a day and 1/2 ahead of time. Serve with plain chips or tortilla chips.

Italian Beef Recipe

The other night I tried out the Italian Beef recipe my Aunt Missy gave to me and it was super easy and delicious! Even Chad liked it!! I forgot to take a picture (I know, I take pictures of everything--how could I have forgotten)? I will try and remember to take one next time.

rump roast 2-3 lb
4-6 beef bullion cubes
2-3 tbs onion flakes or as much real onion as you prefer
1 tbs garlic salt
2-3 tbs italian seasoning

put meat in crock pot

add seasonings
cover with water
cook on low overnight

take out of crock pot and shread with a fork
put back in crock pot 1-3 hours on low

serve on sub rolls with your choice of cheese

FYI--Wal-Mart carries rump roasts. Bullion cubes are on the soup aisle (for those of us who searched the entire seasoning aisle several times and couldn't find). I used the McCormick italian seasoning spice (this is what Missy said she used). My roast was over 3 lbs and I used 5 bullion cubes, 3 tbs of the onion and italian seasonings. Chad added the water and looked like he flooded the crock pot. For future reference I would either cut the meat in half or not put so much water. When I pulled the meat out to shread I took off 7 cups of liquid(!!!) and still had plenty of juice to spoon over the meat on the sub rolls (We used white Cobblestone brand rolls, found near the deli at Wal-Mart, this is again what Missy said she uses). We used Mozzarella Cheese slices and toasted the sandwich in the toaster oven. Oh, I only put it back into the crock pot for about an hour or so. I figured it had to be done since it had cooked all night.


This is a very easy recipe and you can have several meals off of it. So, if anyone tries it let me know. I plan on making it again now that I have everything except the meat in my cupboards.
